This delicious breakfast is simple to make, and happens to be really good for you too!
My favorite thing about this dish is that we are able to use homemade bread, my mother-in-law's famous garden salsa, and fresh eggs from our very own flock. The only ingredient that we have to buy at the store is the avocado, as they are a little difficult to grow out here in Wyoming.
Ingredients:
- 2 slices of bread
- 2 eggs
- 1 avocado
- your favorite salsa
Directions:
- Toast the bread.
- Meanwhile, cook the eggs to your liking. I always go with sunny side up.
- Slice up the avocado.
- On each piece of toast, place half of the avocado, one egg, and top with a spoonful or two of salsa. It's as easy as that!
